Blueberry... dish

I have no idea what to call this thing but it is soooo good! I had it for the first time at a friend's birthday dinner last week and I immediately asked for the recipe! A coworker and I each picked 7 lbs. of blueberries on Saturday and today I just had to make it. =)

Ingredients:

10-13 cups fresh blueberries (a sweeter variety will work better than something more tart)
1 pkg. graham crackers
3-4 bananas
Apple juice concentrate
Cinnamon
Sugar
Coriander
Shredded coconut

In a Quisinart or dry blender (or using a ziplock bag and a rolling pin, like me), crush graham crackers. Spread in the bottom of a 9x13 inch Pyrex dish. Sprinkle with cinnamon and sugar (I used some vanilla sugar that I randomly found in the spice drawer and it is delicious!).

Layer sliced bananas over the graham cracker crumbs.

Mash 2-4 cups of the blueberries and mix with 2-3 Tbs. apple juice concentrate. Spread half of this mixture over the bananas.

Next, pile on about 2/3 of your remaining fresh blueberries. Spread on the rest of the mashed mixture, followed by the rest of your fresh berries.

Sprinkle with shredded coconut, coriander (which I skipped all together) and cinnamon.

Serve chilled.

Helen just called it "Raw Blueberry Dessert." (As far as I know, she created the dessert, putting together her own recipe for it. This particular recipe is marked as being hers.) It's not a very exotic name but it IS a really good dish - I agree! We make it every July.

The most memorable year is when Helen made it right after I had had all four wisdom teeth removed. Took me F-O-R-E-V-E-R to chew my portion but it was so worth it. =)
